HOW TO SAUTE

Sautéing is to cook in a hot pan with a small amount of fat -- either oil or butter. It's a healthy way to create flavor and color as long as you follow the simple rules. 

1. Use a large, flat pan to give ingredients ample room to move around and cook.

2. Heat the pan high until hot and add oil.

3. Add aromatics like onion and garlic to the pan to build flavor.

4. When sautéing numerous vegetables, cook those that will take longest first (carrots, potatoes, squash) and cook those that will take the shortest last (leafy vegetables, tomatoes, herbs).
