If you’ve been following my Cooking Matters series where we introduced the program, explored the problem of child hunger in America and the exciting donation of $1,000 in our names at our local Food Banks from the ConAgra Foods Foundation, then you pretty much rock and thank you for joining me the entire way.  It’s been an incredibly humbling and eye-opening experience all around.
After the Cooking Matters bootcamp ended, the bloggers were asked to participate ...

17 days in Europe. 45 miles hiked with 60 lb backpacks. 1 (bad bad) case of food poisoning. 7 pounds lost, each. Endless laughter with friends on first week.  Beautiful sunsets and snuggles with my love for the rest.  Exploring small towns, big cities, and eating all the pasta and pizza to our hearts’ desire — may we always take these wonderful adventures together.

It’s good to be home.  We came back to our sweet ...

Alas the moment I’ve been waiting for has finally arrived — can I have a drum roll please??
A few months ago, editor assistant Lindsay Hunt of Marcus Samuelsson asked me if I’d be interested in contributing a post for Marcus Samuelsson.  I thought I was dreaming, I kind of hyperventilated for a little bit and then jumped up and down (threw in a cartwheel here and there) and tried to act as cool and calm ...

My alarm blares the latest hit from Justin Bieber as I clumsily (desperately) search for the snooze button.  Just five more minutes, I tell myself, I hate waking up to bad adolescent music.  I zombie my way to the bathroom, brush my teeth, pull my hair back in a ponytail and continue to zombie my way to the kitchen.  My stomach is growling – oatmeal with bananas and honey or grapefruit with buttered toast?  I ...

Cooking Matters Bootcamp sponsored by Share Our Strength and ConAgra Foods
Texas has the second highest rate of child hunger in the entire United States with a child poverty rate of almost 25%, that’s 1 out of 4 children.  For many of us hunger is never an issue: we feel hungry, we simply grab a bite to eat from our kitchen or from a restaurant.  (Extreme) Hunger is a foreign feeling for many of us, but ...

So remember last week when I went over the tutorial on how to properly cook an egg? Now I’m introducing a recipe that will incoporate what you’ve learned. The best part about this recipe is that it’s simple (15 minutes to be exact), hearty, delicious and healthy — packed with whole wheat pasta, nuts, olive oil, crushed red pepper and of course the perfect soft-cooked egg.

Another year has come and gone and what an eventful year 2010 turned out to be.  If life continues to climb this uphill trek of love success and happiness I may consider myself to be the luckiest person in the world, but let’s not jinx it quite yet.  Though the year seemed to have flown by in a blink of an eye, I am thankful for the memorable events that have occurred along with the many life lessons learned ...

The older we become the busier we get — busy building our careers, busy taking care of children, busy trying to make every thing work.  Time for yourself slowly becomes a distant memory and all you ever hope and wish for is “more time in the day”.   All you want is to come home to a nice dinner and the only option of a restaurant around the corner has become bland.  Yet lack of time always seems ...
